Ingredients
• 1 cup cooked wild rice
• 1/2 cup sliced strawberries
• 1/2 cup blueberries
• 1/2 cup cranberries
• 1/4 cup chopped nuts: walnuts, almonds, or pine nuts
• 2 tablespoons maple syrup
Directions
- Arrange the first four ingredients in a bowl or mix together.
- Sprinkle with chopped nuts.
- Drizzle with maple syrup.
- Eat immediately.
Note
Excellent source of fiber; omega-3 fatty acids; folate; vitamins B1, B2, B3, B6, C, and K; and minerals (magnesium, zinc, copper, and manganese). Good source of vitamins B5 and E and minerals (calcium, potassium, and iron).
Tips
• Fresh fruit has lower carb counts than when it is dried.
